A naturally ripened olive with changing hues, harvested at the optimal time when the fruit begins to take on rosy shades. It is preserved exclusively in water and salt. The olives come from farms in Lérida and Tarragona - the area known as Tierras del Ebro in Catalonia. The variety has a mild bitterness and a subtle, natural flavour.
