On a rare time, we get a particularly nice tea in our hand and subsequently in the cup. A tea that just tastes wonderful and stands out from all the other lovely and good teas we've tasted over time.

Such a tea is our new Japanese Shincha Gyokuro "Homare". A high quality Japanese tea, just like Saint. It is a gyokuro based on the earliest harvest of tea magazines from late April to the beginning of Maj- Hence the term Shincha, the Japanese pendant to First Flush.

Gyokuro, means Jade-Dug in Japanese, and the name refers to the jad-like color the leaves have, and the slightly white, dew-like brew. Teen is a shadow tea. That is, the tea farmers shield the tea bushes for the sun's rays for 3-4 weeks up to the harvest, with mats.

This stresses the plants to produce a larger amount of chlorophyll, which gives the tea its beautiful, green color and which defense develops the plants a higher content of caffeine and amino acids, while the bitter substance tannin decreases. Amino acids give tea a nice obesity and intense taste.

The result is a tea that, due to the high content of caffeine and tein, has an invigorating effect that often lasts throughout the day, as well as increases the ability for concentration and focus. Against this background, Gyokuro is often mentioned in the company of Matcha.

Immediately after the harvest, the leaves are sorted and steamed easily to stop the possibility of oxidation. After this process, the leaves are rolled with a special technique so that they appear as long needles.

This is by no means a everyday life. Gyokuru 'Homare' is an exclusive tea that deserves to be served to special occasions and when you need to be a little spoiled.

Gyokuro 'Homare' is a Schincha or First Flush, which affects both supply and price. On the other hand, it is full of flavor and character that fully outweigh the price.

The taste is characteristic of port notes of seaweed and seagrass that give it umami, and botanical notes. In this way, 'Homare' is a tea that challenges one's taste universe.

Schincha Gyokuro 'Homare' deserves some attention in brewing. You get the largest expand of the tea's flavor universe by brewing it at low temperature about 40 to 45 degrees - or even lower - in a pot with plenty of space, giving the leaves space to unfold. The low brewing temperature makes Gyokuro an obvious choice on a hot summer day.

The drag time is relatively short - about 1 minute. You can brew several times on the same leaves, and here you will find that taste and aroma develop and show the tea flavor profile from new sides. For subsequent brewings, it is recommended to go up to temperature of the water and down during the traction time.

You can advantageously brew Schincha Gyrpkuro 'Homare' in traditional Japanese tea jugs such as Kyusu, Hôhin or Shiboridashi if you want to serve the tea in connection with a Japanese tea ceremony. Teen is then drunk in small, traditional glass cups, giving the full experience of the beautiful green color of the gyrokuro.
