History

One Yuzamashi is a small jug that is used to cool boiled water, especially when preparing temperature -sensitive teas such as Gyokuro, Kabusecha and Saint. These teas require precise brewing temperatures to avoid bitterness and highlight their soft, sweet taste. Yuzamashi lowers the water temperature before reaching the tea leaves, ensuring optimal brewing conditions.

These jugs are typically made of ceramics, porcelain or clay, and have a wide opening and a pouring spout that promotes quick cooling and makes the slope easier. The mold increases the surface area and helps with the heat release. Once the water has cooled in the yuzamasa, it is poured into the teapot, enabling precise temperature control and highlighting the tea's delicate taste.
