Yin Zhen White Bud "Silver Needle" is a white tea of the highest quality. The tea is dried at a temperature just under 40 degrees, after which it is sorted. During the drying, the small knob gets a delicate, gray -green color and is covered by a fine layer of "down". In the glass, the tea is almost colorless, with a discreet, delicious round taste.
Yin Zhen is translated into Silver Needle from Chinese and is originally from the Fujian province of China. There are very high demands on handling and picking a tea of this quality. Usually, the gardens have only two to three days where it is possible to pick this tea, after which the leaves have sprung out. The leaves may only be picked in the period 15 March to 10 April and only on dry days when the dew has evaporated and the soil frost -free. Violet shoots are discarded, the stain must not be too long or short and leaves that are damaged or have unfolded, get a lower quality designation.
