Right now the oranges are amazing. They are fresh, juicy flavor bombs, which are made to sweeten the transition between winter and spring.
We have chosen the family's favorite recipe for a healthy, sweet pampering - an orange cake bursting with almonds. It is also obvious that it goes by the name of "the world's best orange cake" at home in our family. And then it is easy to bake, even if it takes some time because the oranges have to simmer for a long time.
Today we have used regular, sweet organic oranges, but you can also choose blood oranges.
You will need:
2 large, organic oranges
6 medium -sized eggs
250 g sugar
1 rod vanilla
275 g almonds
1 teaspoon baking powder
- Wash the oranges and simmer on low flares for 2 hours for just over a liter of water. Gently take up the oranges, cool them down and halve before removing the kernels and blending the oranges in a food processor.
- Blend the almonds to semi -gross almond flour in a mini chopper or blender. Mix baking powder in.
- Whisk eggs and sugar and add the blended oranges and almond flour/baking powder.
- Fill the dough in a greased spring form of about 24 cm in diameter. If necessary, cover the bottom with baking paper so that the cake escapes easier.
- Bake the cake at 200 degrees for 55 to 60 minutes and allow to cool.
- For the world's best orange cake, we recommend here at Origreen either a fresh Darjeeling, a floral Mountain flower or a classic black UVA Evening Tea
- Sprinkle the cake with icing and serve.
