Monocultivar denotes that only one olive variety is included in the pressing of the oil - in this case Olio Roi's preferred olives, taggiasca. It comes from their own olive groves in Valle Argentina in Liguria. Tastefully, the taggiasca variety is known on a fine, nuanced taste of artichoke, light grass notes and mild pepper. Monocultivar Taggiasca from Olio Roi is a mild and slightly sweet olive oil that is suitable for use with both raw and cooked and fried vegetables, as well as for dishes with fish and light meat.
