Secco del Borgo, is the local peasants' term for a fresh, young wine vinegar. In this way, for generations, it has been ensured that the more popular wine vinegar made on white Trebbiano grapes was not confused with balsamic vinegar.
Secco del Borgo is made in the traditional way, stacking wood chips in a large wooden dish and adding the wine. After that, the acetic acid bacteria that sit on the surface of the tree will grow large by converting the wine's sugar and alcohol into a rot and acidic vinegar. When there is no more alcohol and sugar, the growth and work of the bacteria stops. Then the vinegar is filtered and poured on small oak barrels, where it matures slowly and gets the round, soft and sour -sweet taste - and turns into Secco del Borgo.
Secco del Borgo is recommended for fresh salads and marinades. Try mixing it with a Borgo del Balsamic Condiment and enjoy the special sour-sweet experience and the many complex flavor notes.
