Lovely easy spring cake from the origreen
A quick and delicious spring cake that we eat in the office while tasting tea.
3.5 dl flour
2 tsp. baking powder
1/2 tsp. salt
2.5 dl sugar
3 large eggs
1 tbsp. Fore lemon zest
1 tbsp. Rewed orange peel
0.5 dl whole milk
1.5 dl olive oil
2 dl almonds
1 large spring form - 24 cm

Icing for decoration
Mix flour, salt and baking powder in a bowl. Whisk sugar and eggs foamy and airy, and add the grated lemon and orange peel. Add milk and olive oil little by little while still whipping. Then stir in the flour mixture.
Roast the almonds lightly on a hot pan and cool them down. Blend the cold almonds roughly and mix the coarse almond flour with the rest of the ingredients.
Pour the dough into a greased spring form and bake the cake at 175 degrees for approx. 55 minutes - depending on your oven.
Once the cake has cooled down, you can decorate it with icing.
